La Chimay Rouge

While I was writing my notes up for La Chimay Bleue, I had recalled that I once tried a Chimay in the Fall of 2011 (either upon moving into my new apartment or during a Halloween party).

Realizing that this occurred well after the start of my blog (November 2009), I went to the first place I'd expect such a note on the experience would be. Lo and behold, I found a record of the tasting! Matching this up with my picture record, I also learned that it was a Chimay Red!

The Chimay Red Cap

The Chimay Red Cap, or "Première" in 750 ml bottles, is the oldest of the Chimays. This Trappist beer possesses a beautiful coppery colour that makes it particularly attractive. Topped with a creamy head, it gives off a slight fruity apricot smell from the fermentation. The aroma felt in the mouth is a balance confirming the fruit nuances revealed to the sense of smell. This traditional Belgian beer is best savoured at cellar temperature (10 - 12°C).

A little history

The Chimay "Première" was the first beer brewed at the Notre-Dame de Scourmont Abbey by the Trappist fathers in 1862.

Its current recipe was crafted by Father Théodore when he recreated the brewery after World War II. He was directly inspired by the original recipes from the beginnings of the brewery.

Borgo M is a Friulian project that was initiated in 2003 between the Fantinel family and Domaine Select Wine Estates. Winemaker Notes
Our 2009 Duck Pond Pinot Gris expresses ripe citrus aromas and flavors. A small portion of the blend was barrel fermented to add weight and structure. This wine's acidity makes it an excellent accompaniment to foods of all kinds. For maximum flavor, remove from the refrigerator and let stand for twenty minutes prior to opening.

Vineyard Notes
Nearly all of the Pinot Gris comes from our estate vineyards in Salem: Delaney, Hylo and St Jory. In the St Jory vineyard the vines are spaced 5’x8’, the older vineyards, Delaney & Hylo use 6’x9’ spacing. The soil in these vineyards is primarily “Jory” soil, a weak volcanic ash and rock type promoting low yielding vines. The vineyard management follows a strict regime. Early in the year shoot thinning is performed. After fruit set, leaves are removed in the fruit zone on the east side of the vines. Later the clusters are counted and adjusted through thinning for a maximum of 28 clusters per vine. Finally, once the grapes have achieved 75% color, a final cluster thinning is performed
clusters and second crop clusters. The average yield was 2 tons per acre. Vineyard practices are the leading factor in our high fruit quality.

In 1981, Lyeth Estate was founded in Sonoma County by Chip Lyeth. After having traveled through Bordeaux in the late 1970s, Chip came to believe what the Bordelais had known for centuries: that through blending, you could create a beautiful, distinctive wine, with unique characteristics often very different from the varietals from which it is created. To craft these wines, he brought on his close friend, Bill Arbios.

Alión was born next to the River Duero, in the vein of the Vega Sicilia, but with a vocation that is independent and innovative. In fact, its philosophy and personality has been clearly defined from the moment the winery was founded.

Its very beginnings boasted the aromas and tastes of a wine that was open, modern, attractive and full of strength and exuberance, with the exclusive expression of the tinto fino variety, a concept that was very different from the tradition of Vega Sicilia. The grape bears the character of the River Duero, the aging takes place exclusively in new French wood and, what is more, the process resorts to the most up-to-date oenological practices, giving a result that is radically different.

In short, Alión is an excellent wine, adapted to the international taste of the end of the millennium; shaped by a standard of quality that knows no bounds, but which bears the mark of the character and personality of the region in which it was born.

The company makes and commercialises one type of wine: Alión Reserva Tinto.

Alión is a solid wine, and is the height of expression of the tinto fino grape ripened in the sun and intelligently made into wine. Its colour is concentrated, dark with a luminous and seductive edge, typical of its youth and seasoned by the wood. The aroma is unveiled with an intensity that is not very frequent in the wines from the Ribera del Duero designation of origin. It appears with hints of roast from the grape and top-quality wood. On the palate, the sweetened tannins of the concentrated black fruits blend with the dry creamy tannins of the French oak. It is full of flavor, strong, fleshy and unfolds a truly suggestive range of tastes.

Grapes: 100% Tinto Fino (25-30 years on average)
Production: 292.024 Bordeaux bottles, 3.988 Magnums, 512 Double Magnums and 54 Imperials.
Winemaking: In non-cooled stainless steel vats until January 2003. Then in new Nevers oak barrels for 13 months. Subsequent ageing in bottle until releasing in 2006.
Sold: This vintage will be commercialized during the year 2006.
Climate: Winter: Average with frequent frosts. Moderate rainfall. | Summer: Warm without important rains.

Oskar Blues Old Chub

20111002:
They call it a Scotch Ale. It has a chocolate taste. After about half, I can taste the general Irish ale taste. A slight bitterness lingers at the end, but overall the beer has a great taste.



20130803:
This is the third Old Chub of the six pack. I drank the first during Firefly and the second I brought to a Fourth of July gathering to share. In any case, the beer has a slight bitterness, perhaps because I haven't drank beer in a while. Another possibility is the beer's taste might have changed due to the can being subjected to several temperature changes.

20130821:
I wrote: "Man, this Old Chub is strong. I detect some slight chocolate notes. It's bitter. Maybe it went bad. In any case, I'm only looking to drink half the can. Aside from the initial bitterness, the flavor settles nicely." 1:45AM ET



20140708:
Looking to finish all the beer I have in Maryland so that I don't have to carry any of it home, I open my last can of Old Chub. While the beer is over a year old, I think it tastes excellent. A little strong around the edges, I mostly detect a sweet malty, chocolate notes and hardly any bitterness.
