It comes as a bit of surprise that I haven't tried this beer already. Of course there's the possibility that I have but either didn't take notes, misplaced them, or never blogged them.
In any case, since I was munching on a bunch of carrots, I took a sip to rinse out the carrot flavor in my mouth. Then I took another sip and it felt overly carbonated.
On my fourth sip, I found the flavor to be subtle and the excess carbonation was still a distracting characteristic.
Fortunately, I thought the beer ended on a good note.

Pairing:
With its perfect harmony of cereal flavors, bitterness, and high alcohol content, La Fin du Monde is a refined ale with subtle aromas. Its assertive flavors reveal a strong personality and a profound essence.
Serve it with almost any type of salty blue cheese or a wide variety of dishes made with mussels, salmon, scallops, game, or sausage.
